  • Miso Soup enriched with Tremetes Turkey Tail Mushroom Fruiting Bodies

    Ingredients:

    • 2-4 whole Tremetes Turkey Tail Mushroom Fruiting Bodies
    • 1 piece kombu (about 4 inches), or 1 teaspoon dashi granules if kombu is not available
    • 4 cups water
    • 3 tablespoons organic miso paste (100% soy)
    • 1/2 cup tofu, cut into small cubes
    • 2 green onions, thinly sliced
    • Optional: 1 teaspoon dashi granules (if not using kombu)

    Instructions:

    Prepare the Broth:

In a medium-sized pot, add 4 cups of water and the kombu. If you don't have kombu, add 1 teaspoon of dashi granules.

Add the 2 whole Tremetes Turkey Tail Mushroom Fruiting Bodies.

Bring the water to a simmer over medium heat and let it simmer for 20 minutes.

    Remove the Kombu and Mushrooms:

After 20 minutes, remove the kombu (if used) and the turkey tail mushrooms from the pot. Discard the kombu and set the mushrooms aside for another use or discard.

    Add Miso Paste:

Reduce the heat to low. Place the miso paste in a small bowl and add a ladleful of the hot broth. Stir until the miso paste is fully dissolved, then return it to the pot. This ensures the miso paste dissolves smoothly without clumping.

    Add Tofu:

Add the cubed tofu to the pot and gently stir to combine.

    Add Green Onions:

Add the sliced green onions and let the soup heat through for another 2-3 minutes. Do not let it boil, as boiling can destroy the beneficial properties of the miso.

    Serve:

Taste and adjust seasoning if necessary. Serve the miso soup hot.
